Nipoori chicken masala

4-6 Skewers
675g or 1.5 lb of Chicken Breasts, skinned and cut into one inch cubes.

Method

  1. Mix marinade ingredients together and add to the chicken.
  2. Cover and refrigerate for 6-24 hours.
  3. Skewer chicken and cook in Nipoori Oven for 6-7 mins.

Marinade

6 table spoons plain yoghurt whisked
5 table spoons ghee or oil
Salt to taste
2 table spoons lemon or lime juice
A one inch cube of fresh ginger peeled and grated finely
3 cloves of garlic peeled and mashed to a pulp
1 tea spoon ground cumin
½ tea spoon ground chilli
½ tea spoon garam masala
½ tea spoon tandoori masala
½ tea spoon turmeric
½ table spoon freshly chopped coriander
A few drops of red or yellow food colouring (optional)
