Nipoori lamb masala

4-6 Skewers
675g or 1.5lb Lamb trimmed and cut into 1 inch cubes..

Method

  1. Mix marinade ingredients together an add to the lamb.
  2. Cover and refrigerate for 6-48 hours (the longer the better).
  3. Skewer lamb and cook in Nipoori Oven for 7-8 minutes.s.
    Cook's tip
    Try exchanging the spice contents of the marinade, for freshly chopped herbs to experience a complete new flavour.

Marinade

6 tablespoons plain yoghurt whisked
5 table spoons ghee or oil
Salt to taste
2 tablespoons lemon or lime juice
1 inch cube of fresh ginger-peeled and finely grated
3 cloves of garlic - peeled and mashed to a pulp
1 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon ground chilli
1 teaspoon tandoori masala
2 teaspoons dried mint)
