Nipoori vegetable kebabs

4-6 Skewers


  1. Combine vegetables with herbs, seasoning and oil in a bowl, mix well.
  2. Leave to marinade for half hour.
  3. Skewer vegetables and cook in Nipoori Oven for 3-4 minutes

450g / 1lb mixed peppers, deseeded and cut into bite-sized pieces
450g / 1lb Onion, peeled and cut into bite-sized pieces
1-2 small courgettes, sliced into bite-sized pieces
8-12 small tomatoes
8-12 button or small mushrooms
2-3 teaspoons of dry mixed herbs
2-3 tablespoons of olive oil
Salt and ground black pepper to taste

Or any other combinations of suitable vegetables : Aubergines, Corn on cob, Squashes, Garlic, Chilli peppers, Par-cooked potatoes, etc.
